Italian Cream Sheet Cake

Ingredients

  • 1 Cup unsalted butter softened
  • 2 Cup flour
  • 2 Cup sugar
  • 5 large eggs
  • 1 teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 1 Cup buttermilk
  • 2 teaspoon vanilla extract
  • 1 Cup shredded coconut
  • 1 Cup pecans chopped
Frosting
  • 1 Cup unsalted butter softened
  • 8 oz cream cheese softened
  • 4 Cup powder sugar
  • 1 teaspoon vanilla extract
  • 1 Cup Toasted Coconut
  • 1 Cup pecans chopped

Instructions

  1. Preheat oven to 350 degrees and grease the a 9x13 baking dish.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large mixing bowl, beat together the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time until combined.
  5. Beat in the vanilla.
  6. Alternate between the dry ingredients and the buttermilk and gradually mix until combined.
  7. Fold in the Coconut and pecans.
  8. Pour into the baking dish and bake for 30-35 minutes or until a toothpick comes out clean.
  9. Remove and allow to cool.
Frosting directions
  1. Using a standing mixer, beat together all ingredients except for the coconut and pecans.
  2. Beat together combined and smooth.
  3. Spread evenly on top of the cake.
  4. Top with toasted coconut and pecans.
  5. Enjoy!
