Italian Giardiniera Salad
A light and refreshing Italian salad with an added extra kick for your taste buds. Ready on the table in less than 15 minutes.
Ingredients
- 2 bell pepper yellow red or orange, sweet variety
- 1 red onion (sliced)
- 1 tomato cut into 1″ pieces, large
- ½ c giardiniera diced (pickled cauliflower, carrots, peppers, etc, for salad
- ¼ c basil chopped, lightly packed leaves
- ¼ c Italian parsley (chopped)
- 1 clove garlic (grated)
- 2 tbs extra virgin olive oil
- 1 lemon juice juice of
- salt to taste
- black pepper to taste
Instructions
- Place chopped peppers, onion, tomato, giardiniera, fresh herbs and garlic into a medium bowl.
- Drizzle on olive oil, lemon juice and salt/pepper to taste.
- Mix well and check for seasoning. **Feel free to add or substitute any veggies you have on hand including cucumbers, radishes, romaine, etc.
