Italian Giardiniera Salad

Ingredients

  • 2 bell pepper yellow red or orange, sweet variety
  • 1 red onion (sliced)
  • 1 tomato cut into 1″ pieces, large
  • ½ c giardiniera diced (pickled cauliflower, carrots, peppers, etc, for salad
  • ¼ c basil chopped, lightly packed leaves
  • ¼ c Italian parsley (chopped)
  • 1 clove garlic (grated)
  • 2 tbs extra virgin olive oil
  • 1 lemon juice juice of
  • salt to taste
  • black pepper to taste

Instructions

    Cup of Yum
  1. Place chopped peppers, onion, tomato, giardiniera, fresh herbs and garlic into a medium bowl.
  2. Drizzle on olive oil, lemon juice and salt/pepper to taste.
  3. Mix well and check for seasoning. **Feel free to add or substitute any veggies you have on hand including cucumbers, radishes, romaine, etc.
