Italian Herb Baked Cheese Tortellini

Cheese Tortellini dish comes together in a snap with a little Sauté Express Sauté Starter! Found in the dairy section at your local grocer.

Ingredients

  • 1 lb cheese tortellini fresh or frozen
  • 4 cubes Italian Herb Saute Express Saute Starter
  • 1 medium onion diced
  • 2 small zucchini diced
  • 14.5 oz petite diced tomatoes 1 can
  • salt and pepper to taste
  • 1/2 cup shaved Parmesan cheese
  • 1 1/2 cups grated Mozzarella cheese
  • Parsley for Garnish optional

  1. Bring large pot of water to boil. While waiting for water to boil, prep veggies. Heat deep skillet over medium heat and saute onion, 3 minutes. Stir in zucchini and cook another 3 minutes until onions and zucchini are tender. Salt water and cook tortellini according to package directions. Drain and set aside.
  2. Stir tomatoes, salt and pepper into softened veggies. Simmer lightly for 5 minutes. Stir in cooked tortellini and parmesan cheese. Sprinkle top with mozzarella cheese and place under broiler until cheese is melted and bubbly. Serve hot.
