Italian Herb Roasted Broccoli is an incredibly simple side dish that is packed with flavor and pairs well with pasta, chicken, or fish!

Ingredients

  • 8 cups broccoli cut in long florets
  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon oregano dried
  • 1 teaspoon rosemary dried
  • 1 teaspoon basil dried
  • 1 teaspoon fennel seeds
  • ½ teaspoon red chili flakes
  • 1 teaspoon salt sea salt
  • ½ teaspoon black pepper
  • 1 tablespoon parmesan (garnish)

Instructions

    Cup of Yum
  1. Pre-heat oven to 425 degrees and line a baking sheet with tin foil.
  2. In a large bowl, coat broccoli with olive oil and sprinkle on all dried spices (oregano through pepper.)
  3. Mix well – use your hands for this or get the kids involved!
  4. Roast for 25-30 minutes or until nicely browned.
  5. Garnish with fresh Parmesan.

Notes

  • Excellent source of Vitamin A and C, good source calcium and iron.
