Italian Sausage and Peppers Frittata

Ingredients

  • ½ pound Italian sausage ground
  • 1 cup baby spinach
  • ½ cup red bell pepper
  • ½ yellow onion
  • ½ cup mozzarella cheese shredded
  • 8 whole eggs
  • ⅓ cup heavy cream
  • 1 tablespoon butter
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat oven to 400°F.
  2. Heat a large nonstick/oven-safe skillet to medium and add in the sausage.
  3. Cook until browned, then remove and set aside. Add in the butter, onions and red bell pepper.
  4. Sauté for a few minutes until softened, then add in the spinach. Once wilted, add the sausage back in. Top with the mozzarella cheese.
  5. In a large mixing bowl, add in the eggs, heavy cream, salt and pepper and mix using a hand mixer or whisk.
  6. Pour the egg mixture over the sausage and continue cooking for about 4-5 minutes.
  7. Place the skillet in the oven and bake for 8-10 minutes or until the eggs have set. Top with fresh parsley, slice and serve.
