This savory Italian Sausage and Peppers Frittata is the ultimate breakfast or brunch that comes together in under 30 minutes!

Ingredients
- ½ pound Italian sausage ground
- 1 cup baby spinach
- ½ cup red bell pepper
- ½ yellow onion
- ½ cup mozzarella cheese shredded
- 8 whole eggs
- ⅓ cup heavy cream
- 1 tablespoon butter
- ½ teaspoon salt
- ¼ teaspoon ground black pepper

Instructions
- Preheat oven to 400°F.
- Heat a large nonstick/oven-safe skillet to medium and add in the sausage.
- Cook until browned, then remove and set aside. Add in the butter, onions and red bell pepper.
- Sauté for a few minutes until softened, then add in the spinach. Once wilted, add the sausage back in. Top with the mozzarella cheese.
- In a large mixing bowl, add in the eggs, heavy cream, salt and pepper and mix using a hand mixer or whisk.
- Pour the egg mixture over the sausage and continue cooking for about 4-5 minutes.
- Place the skillet in the oven and bake for 8-10 minutes or until the eggs have set. Top with fresh parsley, slice and serve.
