Italian Sausage Soup Recipe

Italian sausage soup is the ultimate comfort food: a deeply flavored broth that's perfectly seasoned with bites of Italian sausage, savory garlic, nourishing kale, and tender vegetables. In just 30 minutes, you can be sitting down to a delicious, cozy dinner with a big smile on your face!

Ingredients

  • 1 1 tablespoon olive oil
  • 1 1 lb hot Italian sausage cut into 1-inch pieces
  • 1 1 medium onion chopped
  • 2 2 cloves garlic minced
  • 3 3 small Russet potatoes cubed, about 3 cups
  • ½ ½ teaspoon EACH: Italian seasoning and salt see notes
  • ¼ ¼ teaspoon dried chili flakes
  • 6 6 cups beef bone broth see notes
  • 2 2 cups chopped kale or swiss chard leaves packed
  • ½ ½ cup parmesan flakes to serve - see notes

Instructions

  1. Heat the oil in a soup pot over medium heat. Add the sausage and cook until they have started to brown. Remove them from the pot.
  2. Add the onion, garlic, potatoes, Italian seasoning, salt, and chili flakes to the pot and cook until the onion is soft, about 5 minutes.
  3. Add the broth, return the sausages to the pot, and bring the pot to a boil. Reduce the heat and simmer until the potatoes are soft, about 7 minutes.
  4. Add the kale or swiss chard to the pot and let it wilt. Season to taste with extra salt, if needed.
  5. Ladle the soup into bowls and sprinkle some parmesan cheese on top.

Notes

  • Note 1: For the best flavor, use homemade beef bone broth. Homemade chicken broth is a good alternative. If using store-bought broth, we recommend adding some Better Than Boullion to boost the flavor of the broth.
  • Note 2: The amount of salt will vary depending on how much salt is in the broth you use. We use unsalted homemade beef broth and like to add about 1 teaspoon of salt.
  • Note 3: You can either buy parmesan flakes or use a vegetable peeler to peel strips of parmesan off the block of cheese. 
  • Note 4: If you don't have Italian sausage on hand, feel free to use a different type. 
  • Note 5: This is my mom's recipe, although she usually uses spinach instead of kale.
