Italian Turkey Macaroni Soup (Slumgullion)
A healthier alternative to a heavy beef soup this Italian turkey macaroni soup is still a filling main dish hit with the family.
Ingredients
- 1 pound ground turkey one unit
- 1/2 large onion white; diced
- 4 cloves garlic minced
- one ounce can diced tomatoes
- 1/2 cup ketchup
- 4 cups chicken broth strong
- 1 1/2 tablespoons Italian seasoning
- 1 cup macaroni noodles uncooked
Instructions
- Fry the turkey in a skillet until browned and no pink remains. Drain and place into a crockpot.
- Fry the onions until translucent; add the garlic and cook for 2-3 minutes until browned. Add to crockpot.
- Combine the rest of the ingredients (excepting the macaroni) in the crockpot.
- Cook on low for 6-8 hours.
- Around 30-45 minutes before serving, add in the macaroni. Cook in crockpot until tender.
- Serve and enjoy.
