Jalapeno Cheddar Cornbread Muffins

Kick-start your Autumn baking with these incredibly delicious Jalapeno Cheddar Cornbread Muffins. They are wonderfully moist and rich, with a mixture of sweet, savoury and spicy coming from the maple syrup, cheddar cheese and pickled jalapenos, and are on the table in 30 minutes.

Ingredients

  • 1 cup plain flour
  • 1 cup cornmeal
  • 125 g salted butter, soft ( ½ cup)
  • 2 eggs
  • 3 tablespoon granulated sugar
  • ½ teaspoon bicarbonate of soda
  • 1 cup buttermilk
  • ¼ cup maple syrup
  • ¼ cup chopped pickled jalapenos
  • ¼ cup sliced pickled jalapenos
  • 1 cup grated cheddar cheese

Instructions

  1. Preheat the oven to 180 degrees Celsius (350 Fahrenheit).
  2. In a large mixing bowl, add the soft butter together with the sugar, and use a hand mixer to beat them together until creamy.
  3. Add the eggs one by one, beating well after each addition.
  4. Sift in the flour, add the cornmeal, bicarb of soda, buttermilk, cheddar cheese, chopped jalapenos and maple syrup, and use a spatula to mix them together into a batter.
  5. Divide the mixture evenly between each muffin case, then top each muffin with a sliced jalapeno.
  6. Bake for 20 minutes until golden and a skewer inserted in the middle comes out clean.

Notes

  • I used silicone muffin cases and I must say, they work incredibly well, the muffins are super easy to pop out, they do not stick at all, and they keep their shape so well. If you can find some, I highly recommend you invest in some, they are pretty cheap too.
  • After the eggs are added to the creamed butter and sugar, it might look like the mixture has split and it's curdling, but that's absolutely fine, it won't change the texture of the muffins.
  • Make sure the oven is well preheated before you pop the muffins in, the bicarb of soda and buttermilk start working their magic straight away, and a well heated oven makes the difference between moist and light muffins, and dry and hard ones.
