Jalapeno Honey Lime Salmon

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic
  • 1 whole Jalapeño seeds and ribs removed for less spice
  • 1 whole lime juiced
  • 2 tablespoons honey
  • 16 ounces salmon filets

Instructions

    Cup of Yum
  1. Preheat oven to 425°F.
  2. Add the olive oil, garlic, jalapeno, lime, and honey to a food processor or blender. Blend until smooth.
  3. Place the salmon filets on a parchment lined baking sheet.
  4. Cover each filet with the jalapeno mix.
  5. Bake in the oven for 10-12 minutes or until the internal temperature reaches 145°F.
  6. Remove from the oven and serve with your favorite sides. I love to have mine with avocado mango salsa and jasmine rice.
