Ingredients
- 200 g plain flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 tbsp yoghurt
- 150 ml water lukewarm
- 1 tsp Food colouring yellow or orange or red
Sugar Syrup
- 300 ml water
- 300 g sugar
- 1 tsp lemon
Instructions
- In a mixing bowl, combine the plain flour, baking powder, and baking soda.
- Add the yogurt and lukewarm water gradually to form a smooth batter. Mix well.
- Stir in the food colouring of your choice. The batter should have a bright, vibrant colour.
- Cover the bowl with a clean kitchen towel and let it rest for 1 hour to ferment.
- In the meantime, prepare the syrup. In a saucepan, combine the water, sugar, and lemon juice. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes until slightly thickened. Remove from heat and set aside.
- After the batter has fermented, heat the oil in a deep frying pan over medium heat.
- Transfer the batter to a squeeze bottle or a piping bag with a small round nozzle.
- Squeeze the batter into the hot oil in a circular motion to form spiral shapes. Fry until golden brown and crisp.
- Remove the fried jalebis from the oil using a slotted spoon and immediately dip them into the warm syrup. Ensure they are coated evenly.
- Allow the jalebis to soak in the syrup for a few seconds, then remove and place on a plate lined with kitchen paper to absorb any excess syrup.
- Serve warm and enjoy your delicious homemade jalebis!
