Jamaican Jerk Pork Chops

Ingredients

  • 1 bunch scallions (stem trimmed, quartered )
  • 1 small white onion (peeled and quartered)
  • 1 lime juiced
  • 2 tablespoons white vinegar
  • 2 tablespoons fresh thyme (or 1 teaspoon dried)
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 2-inch piece fresh ginger (peeled, sliced)
  • 2 cloves garlic (minced)
  • 2 teaspoons salt
  • ½ teaspoon pepper
  • ¾ teaspoon ground pimento seeds (or allspice)
  • 2 Scotch bonnet peppers (or more to taste, seeded and diced)
  • 4 pork chops (bone-in, center cut)

Instructions

  1. Place everything but the pork chops in a food processor and pulse until smooth.
  2. Put pork chops in a resealable plastic bag and coat with the marinade. Let sit in refrigerator for 3 hours or up to overnight.
  3. Heat grill on high heat and grill pork chops 8 minutes per side.
