Jamie Oliver's Fluffy American Pancakes topped with walnuts and bananas, and a good squeeze of honey, an indulgent yet healthy breakfast or brunch for kids and grown-ups too. This is a quick and easy recipe that will go down a treat every single time. All you need for these pancakes are a few simple ingredients that you can measure with cups and teaspoons, no need for fancy kitchen equipment. My American pancakes do not have any added sugar.

Ingredients

  • 1 cup plain flour
  • 1 teaspoon baking powder
  • 3 eggs
  • ⅔ cup full-fat milk
  • a pinch of salt
  • 2 tablespoon vegetable oil
  • to serve: walnuts, bananas and honey

Instructions

  1. In a large bowl, sift the flour and add the baking powder.
  2. Separate the egg yolks from the egg whites.
  3. Beat the egg yolks lightly, pour over the milk and give it a good stir.
  4. Combine the flour mixture with the milk and egg yolks and mix well with a silicone spatula, you will get a thick batter.
  5. Next, beat the egg whites with a pinch of salt until it forms stiff peaks.
  6. Fold it in the batter, and mix well to combine.
  7. Heat up a non-stick frying pan, add one or two drops of oil and use a ladle to pour over some batter.
  8. Cook on both sides until golden and firm to touch, it should not take longer than 1-2 minutes once the pan is hot.
  9. Repeat with the remaining batter.
  10. Serve with honey, slices of banana and chopped walnuts.
