Jamie olivers low fat caesar salad dressing

Adapted from Jamie Oliver, this is more like a green goddess dressing and is utterly delicious.

Ingredients

  • 110 ml yoghurt
  • 1 Tbsp red wine vinegar
  • 6 anchovy fillets
  • 1 Tbsp Worcestershire sauce 
  • 2 Tbsp basil pesto if you don't have fresh basil
  • 1 t Dijon mustard
  • 1 Tbsp lemon juice
  • 40 g Parmesan Cheese or pecorino
  • 3 Tbsp olive oil
  • salt and pepper to taste

Instructions

    Cup of Yum
  1. Place all the above ingredients into a food processor or liquidizer and whiz it up until it is well combined.
  2. Store in a sealed container in the fridge and use as required.

Notes

  • Use good quality mayo if you prefer or half may and half yogurt. Play around with the ratios to make your perfect dressing. Add a cup of baby spinach leaves to make it a green goddess
