Ingredients
- 1 cup of carrots, cut into 1-inch sections (or use baby-cut carrots)
- ½ cup of water
- 3 tablespoons of minced fresh ginger
- 1 tablespoon of rice vinegar
- 1 tablespoon of soy sauce
- ½ tablespoon of neutral oil (canola, vegetable, etc.) oil
- 1 teaspoon of sugar
- ½ teaspoon of salt
Instructions
- Put the carrots in a bowl, add the water, cover with a plate, and microwave for 5 minutes. Alternately, put the carrots and water in a small pot, bring to a boil, and simmer, covered, for 5 minutes or until the carrots are cooked through.
- Add the carrots, water, and remaining ingredients to a blender, and puree until smooth. Refrigerate until cold.

Notes
- Use fresh ingredients: Fresh ginger creates the brightest, freshest flavor over pre-minced/powdered ginger. Fresh carrots are key, too.
- Blend thoroughly: Add enough ingredients to the blender for the blades to work properly and blend it until smooth and creamy. Stop the scrape down the sides of the jug if necessary.
