- 1 cup rice noodles cooked (Sweet Potato Starch Noodles make a good substitute)
- 1/2 cup carrot ginger dressing
Instructions
- In a bowl, combine the lettuce, edamame, carrots, cucumber and rice noodles in a bowl.
