Japanese Sesame Sauce
Although it's most commonly associated with Shabu Shabu, Japanese sesame sauce or Goma Dare is a versatile condiment used for dipping, dressing, or seasoning a wide variety of foods. My Goma Dare recipe is easy to make in the blender and makes for a creamy umami-rich sauce that's packed with sesame flavor.
Ingredients
- 30 grams sesame seeds ~¼ cup, toasted
- 5 grams katsuobushi
- ½ cup tahini or Asian sesame paste
- ½ cup water
- ¼ cup soy sauce
- 1 tablespoon cane sugar evaporated
- 1 tablespoon sesame oil toasted
- ¼ teaspoon salt
Instructions
- Add the toasted sesame seeds and katsuobushi to a blender or food processor and blend until the mixture becomes powder.
- Add the tahini, water, soy sauce, sugar, sesame oil, and salt and blend until smooth.
- Store in a sealed container in the refrigerator until you are ready to use it. It should last at least 2 weeks.
Notes
- This recipe makes 1 ½ cups of sauce.
