Jeow Som

Jeow som or jaew som ແຈ່ວ ສົ້ມ is a hot sweet chilli sauce popular in Laos and Thailand (แจ่ว).

Ingredients

  • 3 cloves garlic , with the skin on
  • 2 tablespoons finely chopped cilantro
  • 8 red Thai chillies
  • ½ teaspoon salt
  • 2 tablespoons fish sauce
  • 2 tablespoons sugar
  • 4 tablespoons lime juice

Instructions

    Cup of Yum
  1. Grill the garlic and chillies over embers, or in direct contact with a gas stove flame, until their skins turn black.
  2. Remove the skins, and place the garlic and chillies in a mortar.
  3. Add all the other ingredients, and pound everything to make a thin paste.
  4. Garnish with chopped cilantro.
