Jerk Chicken Fajitas

Ingredients

  • 4 tbsp olive oil divided
  • 2 tbsp lime juice
  • 2 tbsp jerk seasoning
  • 1 ½ lbs boneless, skinless chicken breasts cut into thin strips
  • ½ cup red bell pepper julienned
  • ½ cup green bell pepper julienned
  • 1 cup red onion thinly sliced
  • 8 tortillas warmed
  • ½ cup Honey Lime Dressing click link for recipe

Instructions

  1. Add 2 tbsp olive oil, lime juice, jerk seasoning and chicken to a large ziploc bag, toss to combine and set aside.
  2. Add the remaining 2 tbsp olive oil to a large skillet over medium-high heat.
  3. Once the oil is hot, add the bell peppers and onion.
  4. Saute 4-5 minutes, then add the chicken, saute 5-6 minutes, then spoon into warm tortillas.
  5. Top with sour cream or honey lime dressing.
