Jerk Tofu Skewers with Vegetables
These Jerk Tofu Skewers combine firm tofu with a selection of vegetables marinated in a homemade jerk seasoning mix featuring spices like chili powder, cinnamon, and nutmeg. Grilling or cooking them until vegetables are tender creates a vibrant dish with smoky and spicy notes. They can be served alongside rice and peas or adapted with different vegetables or cooking methods.
Ingredients
- 8 mushrooms
- 1 red onion
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini courgette
- 1 extra firm tofu block, 350g
For the Jerk Seasoning Marinade
- 2 tablespoon neutral cooking oil generic cooking oil
- ½ tablespoon chili powder
- ½ teaspoon salt
- ½ teaspoon black pepper freshly ground
- ½ teaspoon granulated sugar
- ½ teaspoon garlic powder
- ½ teaspoon thyme dried
- ½ teaspoon ground coriander
- ¼ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
Instructions
- Clean the mushrooms and halve any very large ones.⠀
- Peel the onion and chop into wedges. De-seed the bell peppers and chop into 1” square pieces. Chop the unpeeled courgette into ½” rings. Cut the firm tofu into 1” square pieces.⠀
- Heat a barbecue or grill pan until hot.⠀
- Meanwhile, mix the seasoning spices and oil in a small bowl. Thread the vegetables and tofu, alternating, onto the skewers and brush with the marinade.⠀
- Cook the skewers on each side until the vegetables are cooked. Turn and repeat on all sides.⠀
- Lovely served with rice and peas.
Notes
- Substitute or add vegetables such as baby tomatoes or pineapple chunks for variation.
- Premade jerk sauce or seasoning mix can replace the homemade marinade for convenience.
- Skewers can be cooked on a barbecue, grill pan, oven, or air fryer depending on equipment and preference.
