  • 8 mushrooms
  • 1 red onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 zucchini courgette
  • 1 extra firm tofu block, 350g

For the Jerk Seasoning Marinade

  • 2 tablespoon neutral cooking oil generic cooking oil
  • ½ tablespoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper freshly ground
  • ½ teaspoon granulated sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon thyme dried
  • ½ teaspoon ground coriander
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

Instructions

  1. Clean the mushrooms and halve any very large ones.⁠⠀
  2. Peel the onion and chop into wedges. De-seed the bell peppers and chop into 1” square pieces. Chop the unpeeled courgette into ½” rings. Cut the firm tofu into 1” square pieces.⁠⠀
  3. Heat a barbecue or grill pan until hot.⁠⠀
  4. Meanwhile, mix the seasoning spices and oil in a small bowl. Thread the vegetables and tofu, alternating, onto the skewers and brush with the marinade.⁠⠀
  5. Cook the skewers on each side until the vegetables are cooked. Turn and repeat on all sides.⁠⠀
  6. Lovely served with rice and peas.⁠
