Ingredients

  • 2 cucumber diced, Persian
  • 2 tomato diced, large
  • 1/2 red onion finely chopped
  • 1/3 cup parsley chopped, fresh
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large bowl, combine the chopped cucumbers, tomatoes, red onion, and parsley. Drizzle with olive oil and lemon juice.
  2. Season with salt and black pepper to taste, and toss everything together until well mixed.
