Jessica's Dorito Taco Salad with Creamy Taco Dressing
Jessica's Dorito Taco Salad combines seasoned ground beef with fresh romaine or iceberg lettuce, cheddar cheese, tomatoes, green onions, and crunchy Doritos for scooping or topping. The salad is versatile, allowing customization with optional dressings like creamy taco salad dressing, pickled red onion, and avocado slices. This layered or tossed salad offers a textured mix of crisp veggies, savory meat, and a cheesy finish, making it adaptable for various tastes and meal settings.
Ingredients
for the salad:
- 1 lb. ground beef turkey, or chicken
- onion diced, half of a small
- 2 garlic minced, large cloves
- 1 taco seasoning portioned for 1 lb. of ground meat - here's our favorite store-bought seasoning mix, package
- 2 to 3 romaine lettuce chopped into bite-size pieces, or 1 to 2 heads of iceberg lettuce
- 4 green onions sliced
- 3 c. cherry tomato halved; or Roma tomatoes, chopped
- 2 to 3 c. cheddar cheese or Mexican blend cheese, shredded
- tortilla chips for scooping up the salad and/or for crushing over the salad, Doritos nacho cheese flavored
for the optional dressings and sides:
- my favorite Easy Creamy Taco Salad Dressing
- red onion pickled
- taco sauce
- sour cream
- avocado or guacamole; fresh slices
- black beans rinsed and drained
- cilantro chopped
- lime cut into wedges, for squeezing over the top, fresh
Instructions
- In a large skillet over medium to medium-high heat, brown the ground meat and onion. When meat is nearly halfway browned, add the garlic. Once meat is browned and onion is softened, remove any excess fat from the pan. Then sprinkle taco seasoning over the mixture, stir in 1/3 cup of water, and let mixture simmer over medium heat until water is dissolved. Remove pan from heat. This can be prepared a day in advance and refrigerated until ready to serve - just warm it up again when creating the salad

My sister Jessica offers bottles of Thousand Island, spicy ranch, and/or zesty French dressings, for people to drizzle onto their salads as they wish.
