Jordan Marsh Legendary Blueberry Muffins Recipe

Ingredients

  • 1/2 cup butter
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons baking powder
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 2 1/2 cups blueberries
  • 2 tablespoons sugar to sprinkle on top
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 375 degrees F.
  2. Grease muffin tins well with butter; grease the top surface of the pans as well.
  3. Using a stand mixer on low speed beat the butter together with the sugar until fluffy. Add vanilla.
  4. Add eggs one at a time and mix until blended.
  5. In a separate bowl sift together the dry ingredients;
  6. Add the dry ingredients to the eggs and butter mixture, alternating with milk.
  7. Mash 1/2 cup of blueberries and stir into the mixture.
  8. Add the rest of the berries whole and stir. Pile the batter high in each muffin cup, and sprinkle the sugar over tops of the muffins.
  9. Bake at 375 degrees for 30 minutes.
