Ingredients
- 1/2 cup butter
- 2 cups all-purpose flour
- 1 cup sugar
- 2 eggs
- 2 teaspoons baking powder
- 1/2 cup milk
- 1/2 teaspoon salt
- 2 1/2 cups blueberries
- 2 tablespoons sugar to sprinkle on top
- 1 teaspoon vanilla
Instructions
- Preheat oven to 375 degrees F.
- Grease muffin tins well with butter; grease the top surface of the pans as well.
- Using a stand mixer on low speed beat the butter together with the sugar until fluffy. Add vanilla.
- Add eggs one at a time and mix until blended.
- In a separate bowl sift together the dry ingredients;
- Add the dry ingredients to the eggs and butter mixture, alternating with milk.
- Mash 1/2 cup of blueberries and stir into the mixture.
- Add the rest of the berries whole and stir. Pile the batter high in each muffin cup, and sprinkle the sugar over tops of the muffins.
- Bake at 375 degrees for 30 minutes.
