Judy’s Easy Homemade Chicken Stock

Homemade chicken stock or broth are the best things to have on hand in your kitchen. This delicious homemade stock is made purely from chicken with hints of ginger and scallion for a clear flavor.

Ingredients

  • 4 to 5 pound whole chicken
  • 5 slices ginger
  • 4 scallions
  • 18 cups cold water

Instructions

  1. Put all the ingredients in a large stockpot. Bring it to a boil over high heat, and then immediately turn down the heat to medium low. Cover the lid, and let simmer for 4 to 6 hours—the longer the better.
  2. Once the stock is cooled, strain the broth into individual containers and store them in the freezer for future use.

  • Makes 3 to 4 quarts (about 3 1/2 liters).
