Kale and Strawberry Salad with Pecans

This delicious Kale and Strawberry Salad with Pecans is full of sweet and salty flavor and topped with a light lemon vinaigrette.  {gluten free}

Ingredients

  • 5 cups kale, chopped
  • 1 ½ cups strawberries, sliced
  • ½ cup pecans, chopped
  • ¼ cup feta, crumbled
Dressing
  • ¼ cup olive oil
  • 2 tablespoon balsamic vinegar
  • 1 teaspoon pure maple syrup
  • 2 garlic cloves chopped
  • 2 teaspoon Dijon mustard I used grainy mustard

Instructions

  1. Whisk all dressing ingredients together in a small bowl. Set aside.
  2. In a medium bowl add the baby kale, strawberries, pecans and feta cheese. Pour dressing over top and toss gently.

Notes

  • If you plan to store this salad in the refrigerator for a few days, do not dress it.  
  •
