Ingredients

  • 4-5 lbs kale tough stems removed
  • kosher salt
  • 3 tablespoons extra-virgin olive oil
  • 3 cups coarse fresh breadcrumbs you can substitute panko but the coarse fresh crumbs really make a difference
  • ½ cup finely grated Parmesan cheese
  • 2 teaspoons fresh thyme leaves divided, plus 5 thyme sprigs
  • 2 tablespoons butter divided, plus more for greasing the dish
  • 3 shallots thinly sliced
  • 1 tablespoon flour
  • 2 cups half and half
  • 5 garlic cloves smashed
  • ⅛ teaspoon nutmeg freshly grated is best
  • freshly ground black pepper
  • 1 cup coarsely grated Gruyère cheese
