This kale gratin walks the line between healthy and indulgent. It's the perfect way to eat your greens on a cold winter's eve. Adapted from Bon Appetit December 2016.

Ingredients
- 4-5 lbs kale tough stems removed
- kosher salt
- 3 tablespoons extra-virgin olive oil
- 3 cups coarse fresh breadcrumbs you can substitute panko but the coarse fresh crumbs really make a difference
- ½ cup finely grated Parmesan cheese
- 2 teaspoons fresh thyme leaves divided, plus 5 thyme sprigs
- 2 tablespoons butter divided, plus more for greasing the dish
- 3 shallots thinly sliced
- 1 tablespoon flour
- 2 cups half and half
- 5 garlic cloves smashed
- ⅛ teaspoon nutmeg freshly grated is best
- freshly ground black pepper
- 1 cup coarsely grated Gruyère cheese
