Kale soup with sweet potatoes and dried tomatoes
Hearty kale soup blending earthy greens with sweet potatoes and savory dried tomatoes. The depth of flavor comes not only from the fragrant herbs - oregano, thyme, and rosemary - but also from the unexpected touch of Medjoul dates.
Ingredients
- 2 cups sweet potato (300 grams)
- 5 cups kale (125 grams)
- 6 to 8 to 8 tomatoes dried
- 3 Medjool dates
- 4 cups broth MM healing
- or 4 or 4 cups water
- with 2 with 2 tbsp mushroom powder
- 1 cup tomato passata
- ½ tbsp oregano dried
- ½ tbsp thyme dried
- ½ tbsp rosemary dried
Instructions
- Warm up the broth or water with mushroom powder.
- Peel the sweet potatoes and cut in bitesize cubes and add.
- Cut the Medjoul dates and add, together with the dried herbs.
- Let simmer for 20 minutes in total.
- Within those 20 minutes add the kale after 5 minutes. There wash the leaves, cut out the stem and cut in pieces.
- Add the tomatoes after 15 (with about 5 minutes to go).
