Karahi Gosht (With Beef)

Ingredients

  • 2 lb stew beef (see notes)
  • ¼ cup cooking oil
  • 2 teaspoon garlic
  • 2 cups water
  • 1 teaspoon salt
  • 2 teaspoon red chili powder
  • ¼ teaspoon turmeric powder
  • 20 whole Thai chilies
  • 4 whole tomatoes see notes
  • 1 inch ginger
  • 1 bunch cilantro

Instructions

  1. Wash the chilies and slit them in half lengthwise.
  2. Roughly chop the tomatoes.
  3. Peel the ginger and julienne.
  4. Heat the cooking oil.
  5. Saute the garlic for 30 seconds to a minute.
  6. Saute the beef till it's no longer pink.
  7. Add the spices and saute for 2-3 minutes.
  8. Add the tomatoes and 2 cups of water. Bring the mixture to a boil and then cover and simmer for 45 minutes to an hour till the meat is tender. (see notes)
  9. Uncover and dry out all the excess liquid.
  10. Add the chilies, followed by the ginger, and saute for 1-2 minutes till the oil separates from any residual liquid.
  11. Turn the stove off, garnish with the ginger and cilantro, stir and serve

Notes

  • The beef - Use the best meat you can source for this recipe. Regular stew meat can be tough and stringy, so I usually buy tenderloin and cut it into pieces. 
  • The tomatoes - For this recipe, use Roma tomatoes. They are juicy and break down quickly, resulting in a perfect curry.
