Ingredients

  • 2 cups of large flake oats NOT instant or quick
  • 2 cups Vanilla Kefir
  • 2 tablespoons maple syrup
  • 2 tablespoons chia seeds
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 large apples peeled and diced
  • 2 tablespoons brown sugar
  • 1-2 tablespoons maple syrup
  • 1/4 cup water
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon cornstarch

Instructions

  1. Combine the first six ingredients together in a large measuring cup. Divide evenly between 4 mason jars (or containers of choice).
  2. Combine the apples, sugar, syrup and cinnamon in a medium sized sauce pan.
  3. Cook until the apples have softened to your liking.
  4. Whisk the cornstarch and water together, then add to the pot.
  5. Stir to make a sauce. Remove from the stove and cool completely.
  6. Spoon the apple mixture over the oatmeal. Cover and refrigerate overnight.
  7. Eat and enjoy in the morning!
