Keto Arugula Salad And Balsamic Vinaigrette
This fresh and colorful low-carb arugula salad is crunchy without croutons, so also gluten-free! Enjoy with a wonderful, sweet and tangy keto balsamic vinegar dressing.
Ingredients
Arugula salad
- 4 cups arugula
- 1 red onion thinly sliced, small
- 1 red bell pepper thinly sliced, medium
- 4 tablespoons pumpkin seeds pepitas
- 1 tablespoon black sesame seeds
Balsamic vinaigrette
- 4 tablespoons extra virgin olive oil
- 3 tablespoons balsamic vinegar
- 2 tablespoons lime juice fresh
- ½ teaspoon salt adjust to taste, fine
- 1 teaspoon black pepper adjust to taste, ground
- 1 teaspoon ground white pepper adjust to taste, freshly ground
Instructions
- Add all arugula salad ingredients to a large bowl.
- In a medium bowl, add all the vinaigrette ingredients and whisk until fully blended. You can also add them all to a mason jar, close the lid and shake vigorously.
- Before serving, quickly mix the vinaigrette (if it separated) and drizzle on top of the salad, then toss to combine.
