Ingredients

Servings

Arugula salad

  • 4 cups arugula
  • 1 red onion thinly sliced, small
  • 1 red bell pepper thinly sliced, medium
  • 4 tablespoons pumpkin seeds pepitas
  • 1 tablespoon black sesame seeds

Balsamic vinaigrette

  • 4 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons lime juice fresh
  • ½ teaspoon salt adjust to taste, fine
  • 1 teaspoon black pepper adjust to taste, ground
  • 1 teaspoon ground white pepper adjust to taste, freshly ground

Instructions

  1. Add all arugula salad ingredients to a large bowl.
  2. In a medium bowl, add all the vinaigrette ingredients and whisk until fully blended. You can also add them all to a mason jar, close the lid and shake vigorously.
  3. Before serving, quickly mix the vinaigrette (if it separated) and drizzle on top of the salad, then toss to combine.
