Ingredients

  • 1 cup cooked beets peeled and cut into small cubes
  • 1 clove garlic pressed
  • 1/2 onion chopped
  • 4 ounces feta cheese cubed
  • 1 cup arugula
  • ½ cup roughly chopped walnuts
Dressing
  • ½ lemon juiced
  • 2 tablespoon olive oil
  • salt and pepper to taste
