Keto Blackberry Jam
Keto Blackberry Jam is a low-carb fruit spread made by cooking fresh blackberries with allulose sweetener, lemon juice, and water, then thickened with xanthan gum. The jam offers fruity sweetness with a reduced sugar content and a texture suitable for keto diets. It can be served as a spread or topping, preserving blackberry flavor in a controlled-sugar format.
Ingredients
- 12 ounces blackberry fresh
- ⅓ cup allulose confectioners
- 2 tablespoons lemon juice fresh
- 2 tablespoons water
- ¼ teaspoon xanthan gum
Instructions
- Add the blackberries, allulose, lemon juice and water to a sauce pan and cook over medium/low heat for 8-10 minutes. The berries will start to break down and the sauce will thicken as it cooks. Using a masher or fork, mash up the blackberries.
- Sprinkle the xanthan gum over the top and whisk. Continue cooking for another 2 minutes, then remove from the stove and allow it to cool. Remember that it will thicken as it cools.
- Allow to cool before serving. If you prefer a smooth sauce, you can blend it in a food processor, until you get your desired consistency. Store in an airtight jar in the fridge for 5-7 days or freeze.
