Ingredients

  • 12 ounces blackberry fresh
  • ⅓ cup allulose confectioners
  • 2 tablespoons lemon juice fresh
  • 2 tablespoons water
  • ¼ teaspoon xanthan gum

Instructions

    Cup of Yum
  1. Add the blackberries, allulose, lemon juice and water to a sauce pan and cook over medium/low heat for 8-10 minutes. The berries will start to break down and the sauce will thicken as it cooks. Using a masher or fork, mash up the blackberries.
  2. Sprinkle the xanthan gum over the top and whisk. Continue cooking for another 2 minutes, then remove from the stove and allow it to cool. Remember that it will thicken as it cools.
  3. Allow to cool before serving. If you prefer a smooth sauce, you can blend it in a food processor, until you get your desired consistency. Store in an airtight jar in the fridge for 5-7 days or freeze.

Notes

  • This recipe yields about one cup of jam, suitable for keto or low-carb diets.
  • Use fresh blackberries and cook gently to avoid burning while breaking down the fruit.
  • Allulose acts as a non-sugar sweetener, maintaining sweetness without affecting blood sugar significantly.
  • Adding xanthan gum thickens the jam naturally and improves texture.
  • Keep the jam refrigerated and consume within 5-7 days or freeze to extend shelf life.
