Keto Blackberry Jam
Description
This jam combines fresh blackberries with allulose, a sugar substitute, fresh lemon juice, and water, gently cooked to break down the berries and thicken the mixture. Mashing the berries during cooking helps release their juices and creates a jam-like texture. The addition of xanthan gum acts as a thickener, improving the consistency without adding sugar or starch-based thickeners.
The final product balances tart and sweet flavors, characteristic of blackberries, with the mild sweetness of allulose and acidity from lemon juice. Once cooled, the jam thickens further and can be blended for a smoother texture if desired.
Keto Blackberry Jam is suitable for spreading on low-carb breads or incorporating into keto-friendly desserts. It should be stored in airtight containers, refrigerated for up to a week or frozen for longer preservation. This recipe makes approximately one cup of jam, accommodating small batch needs.
Ingredients
- 12 ounces blackberry fresh
- ⅓ cup allulose confectioners
- 2 tablespoons lemon juice fresh
- 2 tablespoons water
- ¼ teaspoon xanthan gum
Instructions
- Add the blackberries, allulose, lemon juice and water to a sauce pan and cook over medium/low heat for 8-10 minutes. The berries will start to break down and the sauce will thicken as it cooks. Using a masher or fork, mash up the blackberries.
- Sprinkle the xanthan gum over the top and whisk. Continue cooking for another 2 minutes, then remove from the stove and allow it to cool. Remember that it will thicken as it cools.
- Allow to cool before serving. If you prefer a smooth sauce, you can blend it in a food processor, until you get your desired consistency. Store in an airtight jar in the fridge for 5-7 days or freeze.
Notes
- This recipe yields about one cup of jam, suitable for keto or low-carb diets.
- Use fresh blackberries and cook gently to avoid burning while breaking down the fruit.
- Allulose acts as a non-sugar sweetener, maintaining sweetness without affecting blood sugar significantly.
- Adding xanthan gum thickens the jam naturally and improves texture.
- Keep the jam refrigerated and consume within 5-7 days or freeze to extend shelf life.
