Ingredients

  • 2 cups almond flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup coconut oil or olive oil
  • 1/4 cup keto-friendly sweetener
  • 3 large eggs
  • 1 teaspoon fresh lemon zest
  • 1/2 cup blueberries

Instructions

  1. Preheat oven to 350°F. Line a cupcake pan with paper liners and set aside.
  2. Mix almond flour, salt, and baking powder together in a large bowl.
  3. Toss in oil, sweetener, eggs, and lemon zest. Mix to combine fully.
  4. Add in blueberries.
  5. Evenly fill up each cup.
  6. Bake until a toothpick inserted in the center of the muffin comes out clean, about 20 to 22 minutes.
  7. Allow muffins to cool for at least 5 to 10 minutes before serving.
  8. Store leftovers at room temperature in an airtight container.
