Keto Blueberry Pecan Chicken Salad

Ingredients

  • 1 1 tablespoon unsalted butter
  • 1/2 1/2 cup Monkfruit (or your choice of granulated erythritol)
  • 1 1 cup pecans
  • 3 3 cups rotiserrie chicken, chopped
  • 1 1 cup mayonnaise
  • 1 1 cup celery, diced
  • 3/4 3/4 cup blueberries
  • 1/2 1/2 cup sliced green onions
  • 2 2 tablespoons powdered erythritol
  • 10 10 ounces bacon, cooked and crumbled

Instructions

  1. In a medium skillet, melt butter and add the Monkfruit. Stir until melted. Remove from heat and quickly stir in the pecans. Pour onto parchment paper to cool. You can speed this up by placing in the refrigerator. Break into pieces.
  2. For the salad, add the chicken, pecans, mayonnaise, celery, blueberries, green onions, and powdered erythritol. Stir well to coat. Stir in the bacon right before serving to keep the bacon crispy.
