Keto Butternut Squash Soup Recipe

Ingredients

  • 1 medium butternut squash peeled, seeded, and halved
  • 2 tbsp butter
  • 1/2 onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth low sodium
  • 1/4 cup heavy cream
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the squash halves cut-side down on a baking sheet and roast in the oven for 30-40 minutes, or until the flesh is soft and easily pierced with a fork.
  3. Once the squash is cool enough to handle, scoop the flesh out of the skin and set aside.
  4. In a large pot or Dutch oven, melt the butter over medium heat.
  5. Add the diced onion and minced garlic and sauté for 5-6 minutes, or until the onion is translucent.
  6. Add the roasted butternut squash flesh and chicken broth to the pot and bring to a simmer.
  7. Let the soup simmer for 10-15 minutes, or until the squash is very tender.
  8. Use an immersion blender to puree the soup until smooth.
  9. Stir in the heavy cream, ground cinnamon, and ground nutmeg. Season with salt and black pepper to taste.
  10. Serve hot, with optional toppings if desired.
