Keto Cheese Crackers
Keto Cheese Crackers are made by microwaving small mounds of shredded cheddar cheese on parchment until lacy and crisp. This minimal-ingredient snack crisps up quickly, resulting in thin, crunchy cheese crackers suitable for low-carb diets. They can be eaten plain or dipped, making a convenient, savory bite-sized treat.

- 4 tablespoons cheddar cheese shredded
Instructions
- Place four mounds of cheese on parchment (not wax) paper. Slightly flatten. Make sure they are 1-2 inches apart.
- Place the parchment paper directly on the microwave glass tray.
- Microwave the pieces on high for 1:30- 2 minutes until lacy and lightly browned. In my microwave, this takes 1:30 minutes.
- Allow the crackers to cool for a few seconds, then peel them off the parchment.
- Blot the excess oil with a paper towel and serve alone or with a dip such as guacamole, salsa, or Greek yogurt dip.
Notes
- Microwave times vary, so start with 1:30 for four crackers and increase by 30 seconds if they are not crisp enough.
- You may use either shredded cheese or cut a 1-ounce block of cheddar into four squares—the texture outcome is similar.
- Store completely cooled crackers in an airtight container; they will keep on the counter for a few hours or in the refrigerator for up to four days.
- Keto crackers are best eaten fresh as they tend to lose their crispness over time.
