Instructions

  1. Place four mounds of cheese on parchment (not wax) paper. Slightly flatten. Make sure they are 1-2 inches apart.
  2. Place the parchment paper directly on the microwave glass tray.
  3. Microwave the pieces on high for 1:30- 2 minutes until lacy and lightly browned. In my microwave, this takes 1:30 minutes.
  4. Allow the crackers to cool for a few seconds, then peel them off the parchment.
  5. Blot the excess oil with a paper towel and serve alone or with a dip such as guacamole, salsa, or Greek yogurt dip.

Notes

  • Microwave times vary, so start with 1:30 for four crackers and increase by 30 seconds if they are not crisp enough.
  • You may use either shredded cheese or cut a 1-ounce block of cheddar into four squares—the texture outcome is similar.
  • Store completely cooled crackers in an airtight container; they will keep on the counter for a few hours or in the refrigerator for up to four days.
  • Keto crackers are best eaten fresh as they tend to lose their crispness over time.
