Keto Chicken Salad Recipe

Versatile low carb chicken salad recipe using pre-cooked chicken for ease. Enjoy this keto chicken salad over vegetables or right out of the bowl.

Ingredients

  • 4 cups cooked chicken diced or shredded
  • ½ cup mayonnaise
  • 2 tablespoons mustard - spicy brown dijon or yellow
  • 2 stalks about 1 cup celery, chopped
  • ½ cup green onions chopped
  • 2 tablespoons fresh dill chopped
  • 1 tablespoon fresh parsley chopped
  • 1/4 cup nuts
  • salt to taste
  • pepper to taste

Instructions

  1. In a large bowl, stir together mayonnaise, mustard, dill and parsley
  2. Stir in chicken, green onions and celery until well combined
  3. Fold in nut (optional)
  4. Season with salt and pepper to taste
  5. Refrigerate at least 2 hours before serving
  6. Serve on a bed of lettuce, tomatoes, sweet peppers, lettuce wraps or low carb biscuit.
