Keto Cinnamon Candied Nuts
Keto Cinnamon Candied Nuts are made by coating a mixture of nuts in a spiced, egg white-based glaze sweetened with powdered sweetener and flavored with cinnamon, nutmeg, vanilla, and optional blackstrap molasses. The nuts are baked at a moderate temperature for an hour with periodic stirring to evenly toast and candy the nuts, resulting in a crunchy, flavorful snack suitable for keto diets.
Ingredients
- 1 egg large, white
- ⅓ cup powdered sweetener
- 1 tablespoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- ¼ teaspoon blackstrap molasses (optional)
- 1 coop whey protein powder or vanilla flavored protein (optional, unflavored
- 1 tablespoon water only if adding protein powder
- 2 cups nuts almonds, pecans, walnuts, hazelnuts, peanuts, any one type or mixed, as preferred
Instructions
- Preheat oven to 150 °C (300 °F).
- Beat 1 large egg white to stiff peaks
- Add 1/3 cup powdered sweetener, 1 tablespoon ground cinnamon, 1/8 teaspoon ground nutmeg, 1 teaspoon vanilla extract and (optional) 1/4 teaspoon blackstrap molasses. If you wish a higher protein snack also add 1 scoop unflavored whey protein powder and 1 tablespoon water. Mix until fully combined.
- Add the 2 cups your favorite nuts, any one type or mixed and mix them in, coating them all really well.
- Pour the coated nuts onto a baking tray covered in parchment or wax paper. Spread them uniformly .
- Take the tray with the keto candied nuts into the preheated oven, for one hour. Every 15 minutes, take the tray out of the oven and mix the nuts around with a spatula or wooden spoon, carefully not to rip the paper.
- Take them out of the oven and wait for them to cool down before storing them, in airtight plastic bags or containers.
