Keto Cinnamon Candied Nuts
Description
This recipe begins by whipping egg whites to stiff peaks, then gently folding in powdered sweetener, cinnamon, nutmeg, vanilla extract, and optional blackstrap molasses for complexity. Adding vanilla-flavored whey protein powder and water is optional to increase protein content without significantly changing texture. The mixture is stirred together with a selection of nuts, which can be a single variety or a mix, to thoroughly coat them. The nuts are spread on a parchment-lined baking sheet and roasted at 150°C (300°F) for about one hour, with stirring every 15 minutes to ensure even cooking and to prevent burning. Cooling after baking allows the coating to harden, producing crunchy candied nuts.
The finished nuts make a spiced, sweet snack that can be enjoyed on their own or added to salads and desserts, offering a keto-friendly alternative to traditional candied nuts.
Ingredients
- 1 egg large, white
- ⅓ cup powdered sweetener
- 1 tablespoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- ¼ teaspoon blackstrap molasses (optional)
- 1 coop whey protein powder or vanilla flavored protein (optional, unflavored
- 1 tablespoon water only if adding protein powder
- 2 cups nuts almonds, pecans, walnuts, hazelnuts, peanuts, any one type or mixed, as preferred
Instructions
- Preheat oven to 150 °C (300 °F).
- Beat 1 large egg white to stiff peaks
- Add 1/3 cup powdered sweetener, 1 tablespoon ground cinnamon, 1/8 teaspoon ground nutmeg, 1 teaspoon vanilla extract and (optional) 1/4 teaspoon blackstrap molasses. If you wish a higher protein snack also add 1 scoop unflavored whey protein powder and 1 tablespoon water. Mix until fully combined.
- Add the 2 cups your favorite nuts, any one type or mixed and mix them in, coating them all really well.
- Pour the coated nuts onto a baking tray covered in parchment or wax paper. Spread them uniformly .
- Take the tray with the keto candied nuts into the preheated oven, for one hour. Every 15 minutes, take the tray out of the oven and mix the nuts around with a spatula or wooden spoon, carefully not to rip the paper.
- Take them out of the oven and wait for them to cool down before storing them, in airtight plastic bags or containers.
