Keto Cinnamon Rolls

Keto Cinnamon Rolls are loaded with buttery-sweet spiced filling and smothered in low-carb cream cheese icing.

Ingredients

  • 1 1/2 cup coconut flour
  • 1/4 cup low carb sugar substitute
  • 2 tablespoons baking powder
  • 2 1/2 cups mozzarella cheese shredded
  • 3 ounces cream cheese
  • 3 large eggs beaten
  • 3 tablespoons butter melted
  • 1 teaspoon vanilla extract
Filling:
  • 1/3 cup Low Carb Brown Sweetener
  • 1 tablespoon cinnamon
  • 4 tablespoons butter softened
Icing:
  • 6 ounces cream cheese softened
  • 6 tablespoons butter softened
  • 1/2 cup Low Carb Confectioners Powdered Sweetener
  • 1 teaspoon vanilla extract
  • 1 tablespoon low carb coconut milk if needed

Instructions

  1. Grease a pie dish with melted butter and set aside.
  2. Mix coconut flour, low carb sweetener, and baking powder in a medium bowl. Set aside.
  3. Add mozzarella cheese and cream cheese to a large bowl, and microwave for one minute until melted. Stir.
  4. Add in beaten eggs, butter, vanilla extract, and coconut flour mixture until a dough is formed. The dough will be a bit wet and sticky. Cover with a kitchen towel and place in the fridge overnight.
Filling:

  1. When ready to bake, take the dough out of the fridge and roll out into a rectangle about 9×12 inches.
  2. Preheat oven to 400°F .
  3. In a medium bowl, combine the brown low carb sweetener with cinnamon, mix to combine. Spread butter evenly over the rolled dough, and then sprinkle the cinnamon sugar mixture on top.
  4. Roll dough into a log and slice into 1-inch thick rounds.
  5. Place the rounds into the prepared baking pan. Bake for about 13-15 minutes or until lightly browned.
  6. Allow to cool slightly before adding the icing.
Icing:
  1. In a medium mixing bowl, cream together the cream cheese and butter using a hand mixer.
  2. Beat in the powdered sweetener and vanilla extract, if the mixture is too thick add a bit of low carb milk coconut milk.
  3. Spread the icing over the cinnamon rolls, dust with a bit of ground cinnamon and serve.
