Keto Cloud Bread (TikTok Recipe)

Keto cloud bread is a TikTok viral recipe made with egg whites, erythritol, xanthan gum, and almonds. It is fluffy, mildly sweet, puffy, and super fun to make!

Ingredients

  • 5 egg chilled (Use the egg yolks to make quindim, large, whites
  • ½ teaspoon xanthan gum or 1 teaspoon of cornstarch if you're not on a keto diet
  • ½ teaspoon cream of tartar or 1 teaspoon fresh lemon juice
  • ¼ teaspoon salt
  • 1 teaspoon almond extract or pure vanilla extract. You may also add a few drops of food coloring to color the bread!
  • 3 tablespoons erythritol or any granulated sweetener of choice such as granulated white sugar if you're not on a keto diet, granulated
  • ½ cup almonds plus extra for topping. You may skip them if you prefer!, sliced

  1. Preheat the oven to 300° F (150° C).
  2. Make sure the bowl of your mixer is super clean (does not have a hint of grease in it) and is dry.
  3. Beat the egg whites until foamy. Add the xanthan gum, cream of tartar, and salt. Beat again until soft peaks form.
  4. Then add the extract and beat again until incorporated. When the mixer running, gradually add the sweetener and continue to beat until stiff peaks form.
  5. Gently fold in the almonds with a rubber spatula. Place 4 mounds of the beaten mixture onto a large baking sheet lined with parchment paper.
  6. Mold each like a chubby ball. They must be tall! This way, they will become chubby or puffy after baking.
  7. Decorate their tops and sides with the sliced almonds all over.
  8. Bake for 45-55 minutes or until they become golden brown, puff up and are firm (or looked baked). Let keto almond bread rolls cool just enough to eat! They will have a light and airy texture inside. Enjoy it by itself or with a keto lemon curd.
