Ingredients
- 2 ½ cups heavy cream divided
- 1 cup unsweetened vanilla almond milk
- ½ cup monk fruit/allulose
- ¼ cup butter
- 1 ½ teaspoons vanilla extract
Instructions
- Heat a saucepan to medium low and add in 2 cups of the heavy cream, butter and sweetener, then whisk to combine.
- Allow the mixture to come to a boil, then simmer on low heat for 30 minutes, stirring often.
- Remove from the heat and allow the mixture to cool before moving onto the next step.
- Once the mixture has cooled, whisk in the almond milk, remaining ½ cup of heavy cream and vanilla extract.
- Pour the mixture into a tall airtight jar or large mason jar and store it in the fridge for up to 10 days.

Notes
- Makes 3 cups, serving size 2 tablespoons
- If you can't find vanilla almond milk, you can use plain and just add twice the amount of vanilla extract.
- If you can't have almond milk, you can use unsweetened coconut milk instead. Just know that the creamer will have a coconut flavor.
- If you don't have monk fruit/allulose, you can use Swerve confectioners. I don't recommend using things with Erythritol because it can recrystalize as it cools.
