Ingredients

  • 2 cups almond flour
  • ¾ cup Swerve brown sugar alternative
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • ½ cup unsalted butter melted
  • ½ teaspoon vanilla extract
  • ½ cup sugar-free chocolate chips divided

  1. Preheat your oven to 325°F. Line a baking tray with parchment paper and set aside.
  2. Combine the dry ingredients in a large bowl before adding the egg, butter, and vanilla extract. Add most of the chocolate chips, leaving a handful behind.
  3. Stir until the dough begins to come together. Be careful not to overmix. Use your hands to divide the dough and roll into 1 ½ inch balls.
  4. Using your palm or a flat-bottomed glass, press gently to slightly flatten the balls on the lined baking tray. Add the remaining chocolate chips into the tops of the cookies.
  5. Bake until golden brown, which should take 15-18 minutes. Remove from the oven and allow them to cool before eating or storage.
