- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 large egg
- ½ cup unsalted butter melted
- ½ teaspoon vanilla extract
- ½ cup sugar-free chocolate chips divided

Instructions
- Preheat your oven to 325°F. Line a baking tray with parchment paper and set aside.
- Combine the dry ingredients in a large bowl before adding the egg, butter, and vanilla extract. Add most of the chocolate chips, leaving a handful behind.
- Stir until the dough begins to come together. Be careful not to overmix. Use your hands to divide the dough and roll into 1 ½ inch balls.
- Using your palm or a flat-bottomed glass, press gently to slightly flatten the balls on the lined baking tray. Add the remaining chocolate chips into the tops of the cookies.
- Bake until golden brown, which should take 15-18 minutes. Remove from the oven and allow them to cool before eating or storage.
