Keto Italian Almond Cookies

These keto Italian cookies with almond flour and orange are based on Tuscan ricciarelli biscuits. They are light, soft and delicate, and taste like marzipan! Easy to make with only 5 ingredients and perfect for the holidays!

Ingredients

  • 1 1 cup almond flour
  • ⅓ ⅓ cup powdered sweetener 
  • 1 1 large egg white
  • 1 1 pinch salt
  • 1 1 teaspoon almond extract
  • 1 1 tablespoon orange zest

Instructions

  1. Whisk the almond flour and sweetener together until fully combined and clump-free.
  2. Whisk the egg white with a pinch of salt until medium peaks form.
  3. With a large spoon or spatula, stir in the almond extract, orange zest, and the almond flour and sweetener mixture. Mix until a smooth dough forms. Cover with plastic wrap and refrigerate for at least a couple of hours, or overnight.
  4. Preheat oven to 320 °F (160 °C)
  5. Before rolling out the dough on a stone or wooden surface, dust powdered sweetener to prevent sticking (on a silicone mat, it’s usually unnecessary). Roll the dough into a log about 9 inches long, then cut into 7/8-inch (2 cm) slices. Shape each slice into an oval by gently pinching the top and bottom sides, then transfer them to a parchment-lined baking pan.
  6. Bake the cookies for about 16 to 18 minutes, or until the bottom edges just begin to turn golden.
  7. Remove the cookies from the oven and slide the parchment paper onto a cooling rack. Once they’ve cooled slightly, dust with powdered sweetener.

Notes

  • Erythritol sweetener comes in larger crystals that don't dissolve easily, so it must be powdered or the cookie texture might end up grainy. If your erythritol is granular, simply place it in a blender and pulse for a couple of seconds.
  •  The choice of sweetener type changes the texture of the cookies: Allulose or xylitol based sweeteners make softer cookies, erythritol based sweeteners make crispier cookies.
